Description	Each mess hall served approximately 260 evacuees. A mess hall bell was rung to announce the meals and the people were fed in two shifts. The evacuees would line up cafeteria style, receive their food and eat on picnic type tables. All of the mess hall workers were evacuees; some were paid employees and others were volunteers. Camp food was neither appealing nor appetizing to the evacuees when they first arrived in Amache. Government food allotment for each evacuee was supposed to be 45 cents per day but eventually fell to about 31 cents per day as the Granada project farms began producing vegetables and meat products. The addition of fresh vegetables and meat vastly improved the menu in the mess halls.
